Cabbage-Caraway Quiche
4 Bacon slices, chopped
1/2 lrg Onion, chopped
3 1/2 C Cabbage, chopped
1 C Half and half
3 Eggs
1 C Gruyere cheese, grated
1 t Salt
3/4 t Caraway seeds
Black pepper
1 Pie shell, deep dish, cooked
Preheat oven to 375 degrees.
Cook bacon in a heavy, large skillet over medium heat for 5 minutes. Add onion and saute until tender, about 5 minutes. Add cabbage and cook, stirring frequently, until all liquid evaporates and cabbage is golden brown, about 15 minutes.
Combine half and half, eggs, cheese, salt, and caraway. Season generously with black pepper. Stir in cabbage mixture. Pour into crust. Bake about 40 minutes, until filling puffs and starts to brown. Serve warm or at room temperature.
