Green Goddess Dressing

  • 3                Anchovy filets, soaked in cold water for 5 minutes then dried and coarsely chopped

  • 3/4 C         Mayonnaise

  • 1/4 C         Sour cream

  • 2 T            Chives, fresh and thinly sliced

  • 2 T             Parsley, flat leaved and minced

  • 1 1/2 t        Tarragon, fresh and minced

  • 3/4 t           Basil, fresh and chopped

  • 1 T             Shallots, minced

  • 1 T             Lemon juice, fresh

  • 1/4 t           Kosher salt (to taste)

  •                   Black pepper, fresh

 

Combine ingredients (except salt and pepper) in a blender.  Puree until smooth.  Season to taste with salt and pepper.  Store up to 2 days in the refrigerator.
