Linguine with Onion and Cappacola Ham

in Cream Sauce

 

 

·         cloves garlic, chopped

·         medium sweet onion, chopped

·         1C                            cooked green peas

·         1/2lb                         Cappacola Ham cut or shredded

·         1-2T                          unbleached, all purpose flour

·         1T                             Thyme

·         1pt                            heavy cream

·         2T                             Olive oil

·         1/4C                         salted butter

 

·         Linguine (one recipe of homemade or about ½ package pre made)

·         Parsley for garnish

 

 

Heat oil and butter over moderate heat until the butter melts.  Add the garlic.  Cook about 30 seconds then add the onions.  Cook 5 minutes or until soft.  Add flour and Thyme.  Mix thoroughly.  Add the heavy cream, stirring constantly.  Once the cream is in, heat to a simmer.  Stir as needed and cooked until thickened.  Add ham and peas.  Serve over linguine.  Garnish with parsley.
