Peanut Brittle

  • 2                     Vanilla beans or equivalent paste

  • 3 1/4 C            Peanuts, unsalted and toasted (500 gm)

  • 1 C                  Granulated sugar (200 gm)

  • 1/4 C + 1 T     Corn syrup (100 gm)

  • 1 1/4 C            Unsalted butter, cubed (300 gm)

  • 1/4 C               Honey (80 gm)

  • 2 t                    Salt (6 gm)

 

Scrape out beans and place in a large, heavy bottomed pot.  Add other ingredients and place over high heat.  Stir constantly with a wooden spoon until caramel in color.  Pull out vanilla beans (mixture is very hot).

 

Lightly spray work surface with vegetable spray.  Pour mixture out and roll to 3/8 inch using parchment paper and a rolling pin.  Score the surface while warm for more uniform pieces.  Allow to cool completely, then break into pieces.
