Portobello Sandwich

  • 2                Portabella mushrooms, large and whole

  • 2                Buns

  • 2 t              Tarragon

  • 2 T             Mayonnaise

  • 1                Roasted red pepper

  • 1/2 C         Olive oil

  •                   Salt

  •                   Black pepper, fresh

  •                   Red pepper flakes

  • 3 oz           Feta cheese

 

Clean and de-stem the portabellas.  Marinate in olive oil (use more as needed) with salt, black pepper, and red pepper flakes added to taste.  Roast the red pepper if necessary then clean and slice into 1 inch slices.  Mix the tarragon with the mayonnaise.  Use more or less tarragon as desired.  Grill portabellas and toast the buns.  Assemble the sandwiches with portabellas, red pepper, feta cheese and tarragon mayonnaise.
