Steak Frite (Fries) and Garlic Butter

  • 1 oz                Balsamic Vinegar

  • 1/2 oz             Olive oil

  • pinch               Kosher salt

  • pinch               Black pepper, ground

  • 2 T                  Parsley, chopped

  • 5 oz                 Sirloin steak (or round, London broil, butt), pounded into scaloppini

  • 10 oz               Fries, skin on

  • 2 T                  Parmesan, grated

  • 4 T                  Roasted garlic butter

 

Combine balsamic vinegar, olive oil, salt, pepper, and 1 tablespoon parsley.  Marinate steak for at least 2 hours.

 

Roasted Garlic Butter

 

  • 4 oz                Butter, room temperature

  • 1 oz               Olive oil

  • 2 T                 Garlic, roasted and pureed

  • 2 T                 Basil, chopped

  • 1 t                  Lemon juice

  • 1 t                  Kosher salt

  • 1/2 t               Black pepper, ground

  • 1 T                 Parsley, chopped

 

For roasted garlic butter, mix all ingredients together.

 

Preheat fryer for the fries.

 

Pan sear or grill marinated steak over high heat for 45 seconds per side.  Cut into 1/4 inch strips.

 

Fry fries until crisp (may need to blanch) and drain on paper towels.

 

Toss steak, fries, garlic butter, parmesan and parsley together.

 

Yield:  1 serving
