Suzie's Q
3 Shallots, chopped
1 T Butter
½ C White Wine
½ C Chicken Stock
½ C Heavy Cream
1 Vanilla bean, seeded (or paste)
TT Kosher Salt (TT= To Taste)
Melt butter in saucier. Soften shallots in butter. Add wine and reduce to syrup. Add stock, cream and vanilla. Reduce to desired thickness. Salt to taste.
