Baked Beans |

· 6 oz bacon cut into small, thin pieces · 1 Large onion chopped · 4 cloves garlic minced · 1 T fresh grated ginger · 30 oz Great Northern &/or pinto beans (cooked) · 2 T Cider Vinegar · ½ C Steen's Cane Syrup · ½ C BBQ sauce · ½ C Ketchup · ¼ C Worcestershire Sauce · ½ C Dark brown sugar · 2 T dry mustard · 2 T prepared mustard · 2 t cinnamon · S & P to taste · Meat drippings or 1 – 2 t hickory liquid smoke

In a Dutch oven, crisp the bacon. Reserve 2 – 3 T fat. Sauté onion, garlic and ginger until soft. Remove from heat and add remainder of ingredients and bacon to sautéed ingredients. Cook on the smoker or in the oven, uncovered, until done. 1 – 2 hours in the oven (350) or 3 hours minimum on smoker grill. Stir periodically. Yield: 10 servings
