Combine the egg yolks, egg, and milk in a small bowl.
Preheat the oven to 400.
Lightly flour the work surface. Roll the puff pastry dough into a 12
by 20 rectangle about 1/8 inch thick. Place the dough with the long
side facing you. Using a pastry brush, brush the surface with the
egg wash. Sprinkle with parmesan, salt and pepper (add herbs if
desired). Using a sharp knife (or roller cutter) cut strips (about 1
inch wide) lengthwise. Twist strips with topping side out.
Place on parchment lined baking sheet and bake until puffy and golden
brown (around 20 minutes). Cool completely on a wire rack prior to
serving.
