Chicken Salad |

· 1lb cooked chicken (BBQ/smoked is best)

· 2T Sherry vinegar · 4T vegetable oil · 1C grapes (red or mix) cut in half · 1/2C mayonnaise (use enough to bind ingredients) · Spicy walnut (or pecan) praline Spicy walnut praline · 3T Sugar (prefer sugar in the raw) · 1/3C chopped walnuts (mix fine and larger pieces) · 1/4t cayenne · 1/8t kosher salt (pinch or two) |

Toast walnuts in 1 to 2 tablespoons butter then chop. Melt sugar over moderate heat. Mix in dry ingredients. Layer on tin foil and press down into a layer about a ¼ inch thick (be careful, its hot). Cool and break up or chop. Mix chicken, grapes and spicy praline. Mix wet ingredients separately then add to chicken mixture. Serve immediately or let flavors develop overnight. |
