Chipotle Maple Sausage

  • 2 lb        Mild Country Sausage

  • 1/3C      Granny Smith apple diced finely

  • 1 1/2t     Chipotle adobo puree

  • 3T          Maple/cane syrup reduction (below)

  • 8            Sage leaves sautéed in butter until crisp

  •               Kosher salt to taste

For syrup reduction, start with 3/4 cup of high quality maple syrup and 1/2 cup of Steen's cane syrup.  Reduce each separately by about 1/2.  Mix 2/3 maple and 1/3 cane per volume.

 

Mix all ingredients well and form into desired shape.  Smoke around 230 - 250 for 2 hours.
