Chorizo Sausage

  • 2 1/2 lb Pork butt, cubed

  • 1/4 lb Pork fat, cubed

  • 1/4 C Cider vinegar

  • 1/2 C Cilantro, chopped                  

  • 2 T Tequila

  • 1 small Ancho pepper, dried

  • 9 cloves Garlic, chopped

  • 4 T Cumin seeds, toasted

  • 1 T Mexican oregano

  • 3 T Paprika (sweet)

  • 1 T Kosher Salt

  • 2 t Onion powder

  • 1 t Habanero powder

Mix all ingredients thoroughly and grind with a medium blade.  This is medium hot.  For less heat, remove the habanero powder.
