Chorizo Sausage
2 1/2 lb Pork butt, cubed 1/4 lb Pork fat, cubed 1/4 C Cider vinegar 1/2 C Cilantro, chopped 2 T Tequila 1 small Ancho pepper, dried 9 cloves Garlic, chopped 4 T Cumin seeds, toasted 1 T Mexican oregano 3 T Paprika (sweet) 1 T Kosher Salt 2 t Onion powder 1 t Habanero powder
2 1/2 lb Pork butt, cubed
1/4 lb Pork fat, cubed
1/4 C Cider vinegar
1/2 C Cilantro, chopped
2 T Tequila
1 small Ancho pepper, dried
9 cloves Garlic, chopped
4 T Cumin seeds, toasted
1 T Mexican oregano
3 T Paprika (sweet)
1 T Kosher Salt
2 t Onion powder
1 t Habanero powder
Mix all ingredients thoroughly and grind with a medium blade. This is medium hot. For less heat, remove the habanero powder.
