Crab Dip

  • 4-8oz     Lump Crab meat

  • 1C         Mayonnaise      

  • 1/4C      Parmesan cheese, grated

  • 1/4C      Romano cheese, grated

  • 1/2C      Pepperjack cheese, grated

  • 1T          Prepared mustard

  • 1C         Coarsely chopped spinach

  • 1/2C      Chopped scallions (green tops)

  • 4            Cloves garlic, chopped

  • 1/4t        Tabasco sauce

  •               Salt and Pepper to taste

  •               Old Bay seasoning for garnish

Mix all ingredients together except crabmeat.  Fold crabmeat in last, preserving lumps.  Place in small, buttered casserole or individual ramekins.  Sprinkle top with Old Bay seasoning and bake at 350 for 20 - 25 minutes (or until browned on top).  Serve hot with blue corn chips, toasted pitas, crackers, bread, etc.

 

Can easily modify with artichoke hearts, onions, mushrooms, other fish or meat.
