Jerky Rub

        For 3 lbs of beef (London broil or flank steak)

 

·        2 T Kosher salt

·        2 T ground black pepper

·        3 T sweet paprika

·        1 t cayenne pepper

·        1 T ground thyme

·        2 t Jamaican allspice (pimento)

·        1 t cinnamon

·        1 T onion powder

·        2 T garlic powder

·        4 t Greek oregano ground

·        1 T cumin seeds toasted and ground 

Slice meat in ¼ thick strips.  Coat slices evenly with rub and let sit 8 hours.  Dehydrate at 140 degrees until done (about 6 to 8 hours).
