Mac N Cheese, Baked

  • 1/2 lb Elbow Macaroni

  • 3 T Butter

  • 1 Egg

  • 3 C Milk

  • 3 T Flour

  • 1 t Kosher salt

  •  1 t Black pepper, fresh

  • 1 T Dry mustard

  • 12 oz Sharp cheddar, shredded

  • 1/2 C Yellow onion, finely diced

  • 1 Bay leaf

  • 1/2 t Sweet Paprika

Topping

  • 3 T                    Butter

  • 1 C                    Panko bread crumbs

Cook the pasta al dente.  Preheat oven to 350 degrees.

Melt the butter.  Whisk in the flour and mustard until smooth.  Stir for about 5 minutes.  Stir in the milk, onion, bay leaf, and paprika.  Simmer for 10 minutes.  Remove bay leaf.

Temper in the egg.  Stir in 3/4 of the cheese and season with salt and pepper.  Fold in the macaroni.  Transfer to a 2 quart casserole dish.  Top with the remaining cheese.

Topping

Melt the butter in a sauté pan.  Toss the bread crumbs to coat.

Top the macaroni with the bread crumbs and bake for 30 minutes or until golden.  Rest for 5 minutes before serving.

Yield:  6 - 8 servings
