Preheat the oven to 350. Lightly oil, salt and pepper the salmon.
Grill or sear a couple of minutes per side. Place capers in center
of puff pastry. Cover capers with goat cheese, then with salmon
filet. Fold puff pastry over and seal using egg wash. Place
folded side down on parchment lined baking sheet. Bake 30 minutes or
until brown. Serve with sauce (e.g. roasted red pepper cream sauce)
if desired.
