Stuffed Pork Chops

Preheat oven to 400 degrees.

Cut a pocket in the pork chops and stuff with chorizo cornbread stuffing.  Sauté (oven proof pan) the pork chops for 3 to 4 minutes per side to brown.  Place pan in oven to finish.  Bake 20 to 30 minutes depending on pork chop thickness and bone (less time for boneless).  A slightly pink interior is fine.  Top with flambéed apples if desired.

Variation:  Wrap the pork chops in bacon then sauté each side until the bacon is crisp.  Finish in the oven as above.

Yield:  4 servings
